Cooking with Quinoa

With the hot August days of summer in full swing, cooking in the kitchen is not something that I want to be doing. I don’t enjoy it, and with the air conditioning working overtime, I hate to add to it’s burden by spending my time by the oven.

Quinoa is one of my favorite ingredients to cook with and one of the most versatile. It adapts easily to fruits or vegetables and I’ve used it with chicken and seitan to bring flavor to a meal. Oh, and I’ve even made cookies with it. That’s right, chocolate chip. You knew it would have chocolate in it, right?

Quinoa is considered a complete protein and is considered gluten free. It’s perfect for a warm meal or a salad in the middle of summer. It only takes 15-20 minutes to cook, and can be cooked stove top or in a rice cooker.
