Freezer French Toast

Every parent wants to make their life easier. Mornings in are house are probably a lot like mornings at anyone’s house. Pour cereal into bowls, check backpacks, find shoes, take out hidden toys from backpacks, and rush to get into the car. The other day my daughter complained to me. “Mom, can we please have anything but cereal for breakfast….please??

No offense, but I could be fine with cereal everyday of the week. I deviate from a bowl of cold cereal and milk every once in awhile by making warm cereal with milk–steel cut oats or a fresh bowl of oatmeal. Of course on Sundays I make a nice breakfast. Usually pancakes, baked bread, or muffins.

But the kids don’t feel the same way that I do. They love cold cereal, but also love having waffles, pancakes, french toast, toast, or other breakfast staples.

I came across this freezer french toast recipe several years ago. You can make it with gluten free bread, whole wheat bread, Texas Toast, sourdough, or any of your favorite breads! It’s so easy to prepare and make ahead. It only takes a few minutes to make ahead and freeze. A few minutes to thaw out and you can griddle or oven cook it on those busy weekday mornings.



 4 eggs

1 cup milk

2 tbsp sugar (optional)

1 teaspoon vanilla

8 slices of bread

Brown sugar

Cinnamon or Nutmeg

In a bowl, beat together eggs, milk, sugar (optional), and vanilla. Place bread slices on a slightly greased rimmed baking sheet. Take each piece of bread and dip it into the egg mixture. Flip the piece of bread over once to ensure that both sides become coated in the egg mixture. Place the piece of bread back on the baking sheet. Repeat until all bread is coated in the egg mixture.

Sprinkle a pinch of cinnamon and approximately 1 tsp of brown sugar over each piece of toast. Place baking sheet in freezer for 20 minutes to “flash freeze” the bread. Once bread is firm, remove bread from baking sheet with a spatula and move to gallon sized freezer bags. Label and freeze.

To serve: You can reheat the bread several different ways. Either on the griddle, or in the oven.

Griddle directions: To reheat on a griddle, take out desired amount of bread. Allow to thaw for several minutes. On a medium/high set griddle, cook french toast until cooked thoroughly. Flip bread several times during cooking so it is cooked evenly on both sides.

Oven directions: Preheat oven to 500 degrees. Lightly grease a cookie sheet. Place desired amount of french toast on cookie sheet. Allow to thaw for several minutes before placing in oven. Bake at 500 degrees for approximately 5 minutes on each side. If bread is still not cooked after cooking for five minutes on both sides, cook for 1 minute each side until done.

Makes 4 2 slice servings. This recipe can easily be doubled or tripled for larger families. French toast can be frozen properly up to 2 weeks.

 Serve with fruit, syrup, agave nectar, nuts, yogurt or any other desired toppings.

    There’s another alternative along these same lines for you and your readers.

    Next time they make French Toast, make two or three times what you need and actually cook them off on the griddle. Then allow the extra french toast to cool, portion them into freezer bags with wax paper between them (so they won’t freeze together) and freeze.

    Then, next time you need a quick breakfast that isn’t cereal, you can grab the french toast out of the freezer and put it right into the toaster or toaster oven to defrost. In the end, there would be less prep time/dishes if you are in a hurry one morning.
