Black Bean Burgers



This time of year there is still so much you can justify having a barbeque for. While I want to start fall cooking, the weather is the nicest it is all year. Cool evenings and nice warm days. Football is in full swing and you just want to spend every moment you can enjoying the weather before winter comes.

I really thought that my family had come a long ways in the vegetable eating department. No complaints lately about eating their fruits and vegetables. And they love eating beans within reason. So I decided to be bold and try a black bean burger for dinner with them.

It was like a revolution against me. The husband took a bite and after taking a bite he complained that it was disgusting. “That wasn’t the “burger” I was expecting to bite into. Now I can’t even eat the rest of it.”

That set the kids off and they refused to even take a bite. See parents? You think your kids aren’t listening to you and then something like this happens and you realize they do listen.

So I grabbed the burgers and headed off to bring them over to the neighbors. Who loved them. I left the rest of the family eating cereal for dinner. I was not going to make dinner again–especially when it tasted delicious!

I paired mine with all the regular hamburger fixings and an Oroweat multigrain sandwich thin. I even froze a few of the patties and enjoyed them throughout the week as a quick lunch. My son later enjoyed a burger with me and thought they were good.

Enjoy these delicious meatless burgers. They are fantastic–even if the pickiest eaters in my family didn’t think so. Bean haters!!

2 15oz cans of black beans, drained and rinsed (apx 4 cups)

1/2 cup breadcrumbs

2 eggs

4 chives, chopped finely

3 tbsp fresh basil, chopped finely

2 garlic cloves, minced

1 1/2 tsp cumin

1 1/2 tsp oregano

1 tsp red pepper flakes (use a little more for a spicier burger, less for a milder burger)

1 tsp salt

1/2 tsp pepper

In a blender or food processor, add one can of black beans.(or 2 cups). Pulse puree until it is made into a paste. Pour the paste into a mixing bowl and add the remaining ingredients. Mix until all ingredients are incorporated well.

Form burgers into 3 inch circles. Place on a cookie sheet lined with waxed paper. Once burgers are formed and fill up the cookie sheet, place in refrigerator for 15 minutes to allow them to set up.,

On an outdoor grill set to medium heat or on a stovetop griddle or pan, cook the burgers on one side for approximately 4-5 minutes. Flip the burgers with a spatula and cook on the other side for 5 minutes. Serve on a whole wheat bun, with all the hamburger fixings.

Makes 6-8 3 inch burgers.

**We served our burgers with Alexia waffle fries. Which were a big hit with the kids and husband.**
