Pumpkin Caramel Cookies

My top shelf of my freezer is full of pumpkin treats. I love fall and I love the combination of pumpkin and spices. Could there really be anything better than pumpkin? I’m thinking no.

In my opinion, you can never have enough pumpkin cookie recipes in your recipe book. This one will definetely move to the front of your baking list. It’s a delicious pumpkin cookie recipe with spice throughout and a sweet caramel frosting on top. This pumpkin cookies recipe is one of the softest, moistest cookies I’ve eaten. Pumpkin Caramel Cookies rock!!

I made these cookies for an event, but they almost didn’t make it because the family kept eating them. But it isn’t just the cookie that is good. The frosting is to die for. Really, I’ve got to come up with another recipe with that frosting.

But in the meantime, try these. They are perfect.

Pumpkin Caramel Cookies

Pumpkin Caramel Cookies

An incredible cookie with rich sweet caramel and the warmth of pumpkin and spice.

Ingredients

    For the cookies you will need:
  • 1 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin
  • 1 egg
  • 1 tsp vanilla
  • 2 cups unbleached all purpose flour
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350 degrees. In a mixing bowl, cream the sugars and butter together until fluffy. Slowly add the vanilla and eggs and scrape the bowl as necessary.Stir in the pumpkin, flours, soda, salt and spices until mixture is well combined.
  2. Drop by tablespoon onto lightly greased cookie sheet. Bake at 350 degrees for 10-12 minutes. Remove from oven, and while cookies are still warm, press down lightly on each cookie with the back of a cup to flatten slightly. Allow cookies to cool for several minutes on the cookie sheet before moving to a cooling rack to cool completely.

!For the Frosting: 3 tbsp butter 1/4 cup heavy cream 1/2 cup brown sugar 1 cup powdered (confectioners) sugar 1 tsp vanilla In a saucepan, heat butter, brown sugar and cream until mixture comes to a rolling boil. Remove from heat and allow mixture to cool. Once mixture has cooled, add the powdered sugar and vanilla and stir until powdered sugar is incorporated.. Frost each cookie, allowing frosting to set up before stacking cookies if desired.
