Strawberry Banana Baby Muffins

Valentine’s Day is just around the corner. Valentine’s morning our kids wake up to a fun themed breakfast. Last year they woke up to these heart shaped Valentine pancakes dyed with natural beets.

With a new member of our family who enjoys food (a little too much),

(Yes, there is a baby underneath all of the food in the hair).

Mini muffins are the perfect size for babies. I love to freeze them and pull them out to thaw in the morning. Then I tear them into bite sized pieces for her to enjoy a little finger food with her morning puree.

It’s either that or her brother’s cereal. That didn’t fair well.

How cute are these baby muffins? It’s like a banana muffin recipe filled with strawberry puree and diced strawberrries to make one incredibly delicious muffin. Your baby is going to LOVE these muffins, guaranteed!

Strawberry Banana Muffins for Baby

Yield: 4 dozen mini muffins, 2 dozen regular sized muffins

Strawberry Banana Muffins for Baby

A delicious banana muffin recipe infused with the wonderful flavor of strawberry. Baby will love her first fruits with this incredible muffin!

Ingredients

  • 1/2 cup strawberry puree
  • 1/2 cup banana puree
  • 1/3 cup baby formula, breastmilk, or milk (if baby is old enough)
  • 1 egg yolk
  • 1 cup unbleached all purpose flour (can substitute whole wheat flour)
  • 1 cup oatmeal flakes or oatmeal baby cereal
  • 1/4-1/2 cup brown or white sugar*
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a mini muffin pan or large muffin pan.
  2. In a bowl, combine all ingredients with a whisk or spoon until blended well. Fill each muffin cup 2/3 of the way full with batter. Bake mini muffins for 15-20 minutes, or regular sized muffins for 20-25 minutes. Remove from oven, allow muffins to cool before serving.
  3. To freeze: Allow muffins to cool completely before placing in a single layer in a freezer bag. Label, freeze. To thaw, take muffin out of bag and allow to thaw at room temperature for approximately 30 minutes before serving to baby. Muffins will freeze for approximately one month.

Notes

**You can substitute your favorite sweetener for the sugar. However, children under 1 should not have honey.**

  2. I subbed blueberry for the strawberry (all I had), and they turned out great. My baby gobbles them up! I’m going to try swapping other purees next, to give her more variety…I’m thinking sweet potato, carrot, apple, zucchini….
