I am trying,…TRYING to be good when eating. It’s a lot harder than I thought and I really, really struggle at nights. The other day I had a huge craving for potato chips which was totally bizarre because usually I just crave chocolate and cookies.
I’ve started P90X and love it. I’m seeing great results. I love the recipe book that came with it too. One of my favorites is the P90X chicken salad. I love this recipe for chicken salad! On occasion I substitute a can of tuna for the chicken, but the recipe is perfect so I don’t need to deviate too much. It’s quick and easy. I usually pair it with some fruits or vegetables, but today it needed some chips. I wanted a little crunch.
So I tried some PopChips. I’m a big fan of their BBQ flavored chips, but today I used some regular potato chips for my chicken salad. PopChips are actually what they say–popped chips without any artificial colors, flavors, or preservatives.
P90X Chicken Salad
3 ounces boneless, skinless chicken breast cooked and shredded or diced
1 tbsp low fat mayonaise
1/2 tbsp Dijon mustard
1 tbsp chives, diced
1/8 tsp dill weed
Pinch of black pepper
1/8 cup celery, diced (optional)
In a bowl, combine all ingredients until well incorporated. Cover and chill until ready to serve.
To serve: Serve on a bed of lettuce or spinach, with Wheat Thins, Triscuits or PopChips.
