Peanut butter and strawberry jam, peanut butter and apple butter, peanut butter and grape, peanut butter and honey, peanut butter and banana, peanut butter and apple jelly, peanut butter and pear butter, peanut butter and creamed honey, peanut butter and chocolate chips (only I got carob growing up), peanut butter and apple slices, peanut butter and pear slices….
I really could go on and on and on with the different combinations my mom sent me to school with between first and sixth grade. Everyday.
Except for the days that she sent me with leftovers and wanted me to eat cold spaghetti.
There is a reason I can’t eat leftovers. Or peanut butter and jelly sandwiches. Actually, it’s just been recently I’ve been able to stomach a peanut butter and jelly sandwich again.
It’s been only a month and the kids are already getting antsy for something new in their lunch. I came across this recipe in a magazine as a summer snack and thought it would be perfect for a lunch! I usually pair mine with some string cheese and fresh fruit. The kids love their sweet and salty lunch.
If you are a peanut butter lover, you MUST try this. It’s perfect!
Peanut Butter and Jelly Trail Mix
2 cups whole wheat or gluten free pretzels
1/2 cup dried, unsweetened cranberries
1/2 cup peanut butter chips
In a bowl, combine all ingredients. Store in an airtight container.
To serve, scoop out 1/2-1 cup of trail mix for each child.
Serve with fresh fruit and cheese if desired.
