{Trying It Tuesday} Apple Cinnamon Quinoa Cookies

As I try to catch up with the apples coming off of my tree, more just seem to keep appearing. I’ve got freezer applesauce to last a lifetime, but I’m running out of apple cinnamon combination ideas.

Or so I thought. This quinoa cookie recipe is amazing!

I had some cooked quinoa left over from another recipe and in my search I came across these cookies from Oh My Veggies.

This recipe made me a very happy person.

The cookies aren’t just cookies, they are like muffin tops. They are absolutely delicious. The oats with the nutty flavor of quinoa, apple and cinnamon–it all comes together into one wonderful cookie!

Apple Cinnamon Quinoa Cookies

Adapted from Oh My Veggies

1 1/2 cups whole wheat flour or whole wheat pastry flour (pastry flour preferred)

1 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

2 tsp cinnamon

1/2 cup butter, softened

1/4 cup sugar

1/4 cup brown sugar

1/4 cup honey

2 eggs

1 tsp vanilla extract

1 cup cooked and cooled quinoa

1 cup old fashioned oats

1 cup apples, diced

Preheat oven to 375 degrees. Lightly grease two cookie sheets and set aside for later use.

In a bowl, mix together the flour, salt, baking powder, baking soda and cinnamon. Stir until combined. Set aside.

In a mixer bowl, cream the butter, sugars and honey together until the mixture becomes light and fluffy. Scrape the bowl if necessary. Add in the eggs and vanilla and continue to mix until smooth.

Stir in the flour mixture until incorporated, then stir in the quinoa and oats. Continue mixing until combined. Fold in the apples.

Form a ball out of the batter (two tablespoons in size) and place on the cookie sheets, spacing them approximately two inches apart.  Bake the cookies in the oven and bake for 12-15 minutes or until the cookies become a light golden brown. Remove from oven and allow cookies to cool on the cookie sheet for several minutes before moving to a cooling rack to finish cooling completely.
