It only took me ten years to buy my first waffle maker, but when I did these whole grain pumpkin chocolate chip waffles were the first recipe on my list. And now I am making up for lost time by making an insane amount of waffles. Anytime I ask the kids what they want, they just reply, “waffles.”
And we’ve made quite a few waffles. Apple walnut, buttermilk, buttermilk with chocolate chips, whole wheat, gluten free, and now…pumpkin chocolate chip.
These pumpkin chocolate chip waffles aren’t just ANY pumpkin chocolate chip waffles. I filled them with loads of good stuff and still made them taste good. The kids love them and I love that they are good for them.
Pumpkin Chocolate Chip Waffles
1 cup unbleached all purpose flour
1 cup whole wheat or oat flour
1/4 ground flax
1/4 cup sugar (can substitute natural sugar)
4 tsp baking powder
1 tsp cinnamon
1 1/2 tsp pumpkin pie spice
3/4 cup pumpkin puree
1/4 cup applesauce
2 cups milk
1/2 cup mini chocolate chips
Preheat waffle iron.
In a large mixing bowl, stir together all ingredients minus the chocolate chips. Mix well, then fold in the chocolate chips. Place approximately 1/4 cup of dough for each waffle depending on the size of your waffle maker.
Cook according to your waffle maker manufacturer instructions. Top with whipped cream, syrup or even eat plain.
