Valentine’s Day Baked Double Chocolate Donuts

Having kids seems to bring back the joy of a holiday I largely tried to forget during the awkward junior high and high school years. Val-o-grams brought to me in a junior high class from a secret admirer. Flowers brought to me from a boyfriend in the middle of a high school class. Seriously? Did not one boyfriend or secret admirer ever get that a way to my heart wasn’t through expensive dying foliage, but chocolate? CHOCOLATE.

Now I get to sit back and enjoy Valentine’s Day, watching my kids address Valentine’s to friends and attach little pieces of candy to each card.

While addressing Valentine’s we once again decided to break out the doughnut maker. What started as a simple project turned out to be an afternoon of making all sorts of different doughnut creations.
snickers Each chocolate doughnut is filled with extra chocolatey goodness. Mini chocolate chips are sprinkled inside. We made glaze for the doughnuts and colored it pink and dipped doughnuts in crushed Valentine M&M’s. Yum!

Valentine’s Day Baked Double Chocolate Donuts

  • 2 cups unbleached all purpose flour
  • 3/4 cup brown sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 cup milk
  • 1/4 cup plain yogurt
  • 2 tbsp butter, melted
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup mini chocolate chips

  1. Preheat oven to 350 degrees.
  2. In a bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda and salt.
  3. Make a well in the middle of the mixture, placing the wet ingredients. Stir the mixture together until just combined. Fold in the chocolate chips.
  4. In a mini muffin pan or mini doughnut pan, fill dough 2/3 of the way full in each cup. Bake at 350 degrees for 12-15 minutes. Remove from oven and allow mixture to cool completely before frosting.
  6. 1 1/2 cup powdered sugar
  7. 4 tbsp cocoa powder
  8. 4 tbsp milk
  9. 2 tsp vanilla
  10. Once the doughnuts are cooled, dip the tops into the glaze. Place the glazed doughnut on a cooling rack to allow the glaze to set up. If desired, dip the glazed doughnuts in crushed M&M’s or sprinkles before placing on the cooling rack.
