Double Chocolate Brownies

If there was ever a time that I needed chocolate, it was  last night. A screaming toddler was attached at my hip while the phone rang every thirty seconds. I was also typing a work assignment while keeping attached toddler from leaning over and trying to touch the keys when she wasn’t screaming. The older two kids ran through the house playing a rambunctious game of chase with the two dogs.

The moment they all went down was heavenly. I grabbed my chocolate, turned on one of my favorite shows, and just sat there in complete silence.

And then I went into a motherly panic since things were too quiet.

I made this brownie recipe up earlier in the day when things weren’t so chaotic. It was a simple brownie recipe with coconut sugar and a delicious chocolate brownie taste. Chocolate chip brownies are my favorite, so I made sure that I added some chocolate chips in too.  I must have had some idea of how my day was going to end because I was really glad for the extra chocolate later.

Double Chocolate Brownies

This wonderful recipe for chocolate brownies is made sweeter with the addition of chocolate chips. A fudge like brownie that melts in your mouth!


  • 1/2 cup butter
  • 1 cup coconut sugar (see variations)
  • 2 whole eggs
  • 1 tsp pure vanilla extract
  • 1/2 cup white whole wheat flour (see variations)
  • 1/3 cup cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips


  1. Preheat oven to 350 degrees. Grease an 8x8 inch square pan.
  2. In a saucepan, melt the butter over medium low heat. Once butter is melted, remove from heat and add in the coconut sugar. Stir to combine. Allow mixture to sit for five minutes to allow sugar to dissolve.
  3. Once sugar has sat for five minutes, pour in the eggs and vanilla. Stir until combined, then add in the flour, cocoa, salt and baking powder. Stir just until combined. Fold in the chocolate chips.
  4. Pour the mixture into the 8x8 inch pan and spread evenly in pan. Bake at 350 degrees for approximately 25-30 minutes. Do not overcook. Remove pan from oven, then allow to cool before cutting into squares.
  5. Frost brownies, or sprinkle with powdered sugar before serving.
  6. Variations: Use 1/2 cup coconut sugar and 1/2 cup white sugar, or use 1 cup white sugar. Use whole wheat flour or unbleached all purpose flour in place of the white whole wheat flour.
