Arby’s Beef and Cheddar Recipe

I really, really, really had every intention of posting a St. Patrick’s Day recipe. Really. I made what I thought was going to be a wonderful “skinny” Shamrock Shake alternative. It was disgusting. As my husband put it, it tasted like a menthol covered spinach banana.

So instead, I’m giving you a roast beef recipe. In fact, I’m giving you the real Arby’s Beef and Cheddar Recipe. If, you know, they used real cheese.

Healthy sandwiches are easy to make and simple to put together. This meal is all of that–melted cheese, a rich cut of meat and a homemade onion poppyseed roll to top it off.

Dig in, it’s sandwich night! Oooh, and next time I think we’re going to make the sandwiches with these Skinny Arby’s Curly Fries.

Arby’s Beef and Cheddar Recipe

Arby’s Beef and Cheddar Recipe

Ingredients

  • 1 medium onion chopped
  • 2 tsp poppyseeds
  • 4 tbsp butter
  • 3/4 cup warm water
  • 2 1/2 tsp yeast
  • 1 tsp sugar
  • 3 1/2 cups bread flour
  • 2 tbsp oil
  • 1 1/4 tsp salt
  • 1 whole egg beaten
  • 8 ounces roast beef slices nitrate free
  • 2 cups au jus
  • 4 slices reduced fat cheddar cheese

Instructions

  1. To Make the Bread:
  2. In a skillet, place the onion and butter. Cook on medium heat until onion becomes soft and browned. Remove from heat and stir in the poppyseeds. Set aside for later use.
  3. In the bread maker, place the warm water, yeast and sugar. Stir and allow to set for five minutes. After five minutes add the bread flour, oil, salt and egg. Set the bread maker to the dough setting.
  4. When the dough is done, roll the dough into small golf balls and place on a greased baking sheet. Cover and allow to rise for twenty minutes in a warm spot.
  5. Preheat the oven to 375 degrees. Beat an egg white with one teaspoon of water. Brush the egg white onto the bread and top with a sprinkling of the onion and poppyseed mixture.
  6. Bake at 375 degrees for 15-20 minutes or until browned on top. Remove from heat and allow to cool. Rolls can be cooled and frozen for later use if desired. Makes approximately 12 rolls.
  7. To Make the Sandwiches:
  8. In a saucepan, heat the au jus. Add the roast beef and allow meat and au just to warm. Drain meat from au jus, then discard the au jus or save in a container for later use.
  9. On a roll place beef and a slice of the reduced fat cheddar cheese. To melt cheese, place sandwich in microwave and heat for approximately 20-30 seconds, or until cheese has melted. You can also wrap sandwiches in tin foil and cook for approximately 10-15 minutes at 350 degrees, until cheese has melted.
  10. Variations:
  11. Premake sandwiches and wrap in tin foil. Freeze in freezer safe ziploc bags. To serve, remove sandwiches from freezer. Preheat oven to 350 degrees and bake sandwiches for 20-25 minutes until cheese is melted.

    This makes me smile because the Arby’s Beef and Cheddar sandwich is my grandmother’s favorite. She’s 99 and can still house them. I like the homemade version much better. Thank you.
