Cranberry Pecan Steel Cut Oatmeal

I am a huge fan of steel cut oatmeal. They are so good, and so easy to make. I usually throw it into the rice cooker and forget about it while I get the kids ready for school.  One of my favorite combinations is strawberry flax steel cut oats. But now, I’m really loving this new combination of steel oats. I’m a big fan of anything with cranberries, and this combination just comes together perfectly.

This past week has been a whirlwind and this recipe has come to the rescue many times this week. I am looking forward to my husband being back in town. It’s always a struggle to keep the kids busy and active while Dad is gone. It always seems like I am failing at something. If I’m focusing on school or work, the kids suffer. If I focus on the kids, something else in my life suffers. Being by myself and caring for the kids one my own is one of the hardest things I’ve ever had to do. I stand in awe of single parents everywhere. I don’t know that I will ever be able to get over my admiration for them and the responsibilities that they handle.

Cranberry Pecan Steel Cut Oatmeal

Thick juicy cranberries collide with sweet cinnamon and nutty pecans to make one incredible steel cut oatmeal recipe.


  • 1/2 cup steel cut oats
  • 1 cup water
  • 1/4 cup fresh or dried cranberries
  • 1/8 cup chopped pecans
  • 1 tsp ground cinnamon
  • Milk, to taste (Rice, soy, almond, coconut okay for substituting)


  1. In a rice cooker, place the steel cut oats and water. Set the rice cooker to cook.
  2. When the cooker is done, transfer the oats to a bowl. Stir in the cinnamon, then the milk to taste. Top with cranberries and pecans.
