Trips to the store are not relaxing with an almost two year old, and more and more I find myself just grabbing something off the shelf without reading labels or looking at the price. I’ve always been a smart shopper, but with a toddler you just want to get in and get out fast. Add to that my fear of losing her in the store again. Yeah, Code Adam the other day in the store? That was my child. They found her running between the bakery and the bananas saying “cook-o-lat” for chocolate and “nanas” for bananas. Nothing in life prepares you for the heart attack/panic attack/anxiety attack/guilt attack you suffer when your child runs off. One second she’s helping you pick apples and the next she’s half way through the store.
The other day I went to the store and grabbed some tortilla strips off the shelf for our chicken tortilla soup recipe I was making.
At $2 for a teeny tiny bag, I knew that I could do better. I put the bag back and picked up a package of tortillas instead. When I got home I searched for a recipe and found one. This recipe was inexpensive to make and took under five minutes to cook! These baked tortilla crisps are perfect on salads and soups. I’ll never buy those expensive tortilla strips again! These strips were just as crispy and tasty as the expensive store bought ones.
