Continuing our April Fool’s week of hidden veggie meals, today we’re bringing you Butternut Squash Macaroni and Cheese. Yes, I know….another butternut squash recipe. In fact, one butternut squash made this recipe and the squash lemon drop cookies. This is a great meatless main dish, but before you start make sure you don’t have any bacon in your fridge. My son found some crumbled bacon and decided his macaroni and cheese needed some bacon in it. So we almost made it meatless. You don’t have to add the bacon. And you could even add more vegetables to yours. We like peas or green beans.
This macaroni and cheese is rich and creamy even though it’s lower fat. The butternut squash helps to give it a rich and creamy texture while the cheese gives it that classic macaroni and cheese taste. I’ve upped the health benefits of the macaroni and cheese by adding whole wheat pasta and breadcrumbs. It’s one deliciously tasty macaroni and cheese meal! And I’m happy to say the kids couldn’t figure it out that I hid butternut squash in their meal. This Butternut Squash Macaroni and Cheese should be on your plate tonight!
