Cafe Rio Cilantro Lime Dressing

Earth Day as a child involved a pine tree. Every Earth Day we talked about the three R’s–reduce, recycle and reuse. A few of my elementary school years I can remember a little pine tree being given to us. I’m not sure why we went home with a little pine tree. I grew up in Southern California. Did we have pine trees out there? I can’t remember.

All I know is that after an afternoon of learning my three R’s and getting my little plant that would get rid of the bad ozone layer and reduce pollution I was passionate that we not get rid of that little plant. My parents were nice and said that it would grow into a Christmas tree by Christmas and we could decorate it. After about two weeks I forgot about it, it turned brown and my Mom quietly threw it into the garbage can.

So in honor of Earth Day and forgetting my little plant…and subsequent years of plants, flowers and gardens since that time I’m going a little green today. We’re making Cafe Rio Cilantro Lime Dressing! It’s delicious and tastes great on rice, salad and over meat. You will love the flavor combination in the cilantro and lime dressing. And if you ever have a chance to go to a Cafe Rio restaurant, do it! But if not, enjoy this Cafe Rio recipe at home. You will love it on anything!

Cafe Rio Cilantro Lime Dressing

Cafe Rio Cilantro Lime Dressing

Enjoy your favorite recipe for Cafe Rio Cilantro Lime Dressing at home!


  • 1 1oz package ranch dressing mix (Simply Organic, Hidden Valley, or Frontier organic)
  • 1 cup light mayonaise
  • 1/2 cup reduced fat milk
  • 1/2 cup cilantro, chopped
  • 1/4 cup green salsa
  • Juice of one lime


  1. In a blender, blend all ingredients together until smooth. Remove from blender and pour into a container. Store for several hours until ready to serve to allow dressing to thicken. Serve with rice, meat, or on salad.
