Homemade Spaghettio’s

Can you believe that there are only a few weeks left until the kids are out of school?

I can’t either. Don’t get me wrong. I am so ready for the lazy days of summer to begin. But the one thing that always seems to get forgotten during the summer is cooking. I don’t know why but it seems like trips to the pool, hanging out with friends, and the long days of summer seem to make it so meal time gets put on the back burner.

When I worked at the hospital it was even harder. My shift usually started early in the morning before the sun even came up and didn’t end until almost seven at night. When summer hit, I loved the opportunity to just come home and take the dogs for a walk or spend time outside after being inside all day.

So this week as an ode to summer I’m dedicating the week to quick and easy meals.

And today we’re starting with this recipe for Homemade Spaghettio’s.

These are made with fresh whole grain pasta, tomato sauce, and a sprinkling of spices.  They take only a few minutes to make as a quick lunch or add some chicken and cheese for an easy but filling dinner.

*We used Deboles Whole Wheat Organic Alphabet Pasta. They also have a gluten free corn version too. We found our pasta for the lowest price at iHerb and were able to save even more by finding and using a $5 off any purchase coupon.

Homemade Spaghettio’s

Serving Size: 4 servings

This traditional favorite gets a healthy, great tasting makeover. You'll never buy the canned version again!


  • 12 oz alphabet or circular shaped pasta
  • 2 15 oz cans tomato sauce
  • 15 oz milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • (See notes)


  1. Cook and drain the pasta according to package directions.
  2. While the pasta is cooking, in a separate saucepan on medium low heat mix together the tomato sauce, milk and spices together. Once the mixture is heated, stir in the pasta until combined.
  3. Stir in cheese and chicken (if using) and continue cooking until cheese is melted. (Add nutritional yeast if doing vegan version and stir until combined).
  4. Remove from heat, pour into bowls and top with additional cheese if desired.



For a cheesier version: Add in one cup cheddar or parmesan cheese.

To make it a meal: stir in two cups cooked shredded chicken and one cup cheddar cheese, reserving 1/4 cup of the cheese for sprinkling on top of the bowls.

Vegan Version: Use rice milk, and stir in up to one tablespoon of nutritional yeast for a cheesier version.
