Can you believe that there are only a few weeks left until the kids are out of school?
I can’t either. Don’t get me wrong. I am so ready for the lazy days of summer to begin. But the one thing that always seems to get forgotten during the summer is cooking. I don’t know why but it seems like trips to the pool, hanging out with friends, and the long days of summer seem to make it so meal time gets put on the back burner.
When I worked at the hospital it was even harder. My shift usually started early in the morning before the sun even came up and didn’t end until almost seven at night. When summer hit, I loved the opportunity to just come home and take the dogs for a walk or spend time outside after being inside all day.
So this week as an ode to summer I’m dedicating the week to quick and easy meals.
And today we’re starting with this recipe for Homemade Spaghettio’s.
These are made with fresh whole grain pasta, tomato sauce, and a sprinkling of spices. They take only a few minutes to make as a quick lunch or add some chicken and cheese for an easy but filling dinner.
