Steak Tacos with Lime Mayo Dressing

Here’s another quick and easy meal that you will love. This steak taco recipe is outstanding. So the husband says. He is the resident steak conisseour of the house. I just loaded mine up with all of his bell peppers and made it a veggie version. I will tell you though that the lime mayo dressing is what makes these tacos. It is so good!

Steak Tacos with Lime Mayo Dressing

Bell pepper, flank steak, and a wonderful lime mayo sauce make for one amazing steak taco recipe ready in under half an hour!


  • 8 bell peppers--red, orange, yellow or green
  • 1 teaspoon ground chipotle chile pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1 (1-pound) flank steak, fat trimmed
  • 3 tablespoons mayonaise
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon water
  • 8 tortillas (corn, flour, wheat or multigrain)
  • 1/2 cup salsa
  • 1/2 cup queso fresco, grated


  1. Preheat your broiler to high.
  2. On a baking sheet or broiler pan, arrange the bell peppers in a single layer. Place the bell peppers under the broiler and broil up to four minutes, until lightly blackened. Remove from oven, allow the peppers to cool and cut into thin strips. Set aside for later use.
  3. In a small bowl, mix together the pepper, paprika and salt. Rub the spice mixture on both sides of the steak. Place the steak on the broiler pan or baking sheet and place under the broiler. Broil for five minutes on each side, or until done. Remove from oven, allow meat to cool slightly before cutting into strips across the grain.
  4. In a small bowl, combine the mayonaise, lime zest, lime juice, garlic and water. Mix until well combined.
  5. Place one tortilla at a time in a frying pan or directly on a grill. Heat for fifteen seconds each side, or until lightly charred. Evenly divide the steak and bell peppers among the eight tortillas. Top with one tablespoon of salsa, one tablespoon of cheese and 1 teaspoon of lime mayo mixture.
