Healthy Crockpot Chicken Quesadillas

Awhile back I posted some great summer crockpot recipes¬†along with tips for using your crockpot during the summer. Since then, I’ve been on a mission to find even more easy and simple summer crockpot recipes.

These healthy crockpot chicken quesadillas are so creamy and good and just perfect for summer crockpot use. I threw them into the crockpot before we headed out for a day at the museum. When we got home, dinner took less than ten minutes to go from the crockpot to the table.

Healthy Crockpot Chicken Quesadillas

Prep Time: 10 minutes

Cook Time: 6 hours

Yield: 6 tortillas

Serving Size: 1 tortilla

A healthy crockpot recipe filled with chicken, green chilies, and lot's of creamy goodness!

Ingredients

  • 4 frozen chicken breasts
  • 1 14oz can organic diced tomatoes with green chilies, undrained
  • 1 8oz package fat free cream cheese
  • 2% Pepperjack, 2% monterrey jack, or 1% cheddar cheese (we used Cabot)
  • Whole wheat tortillas
  • Olive oil

Instructions

  1. In a lightly greased crockpot place the chicken, tomatoes and chilies and cream cheese. Cook on low for 6-8 hours or high for 3-4 hours. Right before serving, take the chicken out and shred it. Return the chicken to the crockpot and mix together.
  2. Heat a frying pan over medium heat. Lightly brush a tortilla with olive oil. Place the tortilla oil side down onto the frying pan. Scoop a large spoonful of the meat mixture onto the tortilla. Lightly sprinkle a layer of cheese on top, followed by another tortilla. Lightly brush the top of the tortilla with a light layer of olive oil.
  3. After approximately two minutes (or until the bottom of the tortilla becomes lightly browned), flip the quesadilla over to the other side. Cook until browned, or 2-3 minutes. Slide the tortilla onto a plate and cut into slices with a pizza cutter.
  4. Continue cooking tortillas until done.

      So sorry! I went back in to edit that on the recipe as it looks like I may have accidently erased it while I was writing it. 2 cups of cheese. Hope that helps, enjoy!

      300 calories per quesadilla. (A serving being a top and bottom tortilla with mixture in the middle). It may fluctuate depending on the tortilla that you use. Hope that helps! Enjoy!
