It’s been a crazy back to school season already! In our house, it’s not only the kids that go back to school but Mom does too. In a sheer moment of craziness I decided that I would take an 8:30 in the morning class this semester. I’ve got to now get two kids out the door by 8:00, one over to daycare and me into my chair at school by 8:30. Luckily for me it’s only a couple mornings a week. By the time I get home from school, pick up the toddler from daycare and lay her down for nap time it’s close to 2:00 in the afternoon and to say I’m starving would be an understatement!

Simple and easy meals need to be on the menu, and this one is an easy one with dill, a little bit of mayo and tuna.

Easy Tuna Salad and Chips Lunch

Ingredients

  • 1 small can tuna packed in water
  • 1/2-1 tbsp low fat mayonaise
  • Dill to taste
  • Multigrain Chips (we used Food Should Taste Good)

Instructions

  1. In a small bowl, mix together the tuna, mayonaise and dill until blended completely.
  2. Dip the chips into the tuna mixture to eat.
