Under an Hour Cinnamon Swirl Bread

A delightfully quick and easy bread recipe made with swirls of cinnamon and sugar and ready in under an hour!

Sundays at our house always include a big breakfast. It’s about as necessary as breathing in our house. Since we are all getting up and getting ready for church by 9:00am, lately it’s been a bread I can make up the night before and everyone can nibble on as they get ready in the morning.

This cinnamon swirl bread is perfect. It’s got swirls of cinnamon and sugar goodness and is ready in under an hour. The yeast bread is one of our favorites–we make it frequently for sandwiches and toast. The dough easily adapted to make this beautiful cinnamon swirl bread.

Under an Hour Cinnamon Swirl Bread

  • 5 1/4 cups bread flour*
  • 3 tbsp sugar
  • 1 1/2 tsp salt
  • 1 1/2 tbsp yeast
  • 1 1/2 tbsp oil
  • 2 cups hot water
  • 1/4-1/2 cup coconut or brown sugar
  • 2 tsp ground cinnamon


  1. In a mixer bowl with the dough hook attached, stir together the flour, sugar, salt and yeast for approximately one minute.
  2. Add the oil and water and continue stirring for one more minute. Stop the mixer and scrape down the bowl if necessary.
  3. Turn on mixer to low and mix for five minutes. The dough should be sticky after five minutes. If dough is not sticky, add water one teaspoon at a time, stirring just until dough becomes sticky, then turn off mixer immediately.
  4. Divide the dough into two equal pieces and knead a few times until the loaf has a smooth, even consistency.
  5. On a lightly floured surface, roll the dough into a 12x8 inch rectangle. Sprinkle the sugar and cinnamon evenly over the surface of the dough.
  6. Place a piece of plastic wrap or wax paper over the top of the dough. Lightly roll the rolling pin over the plastic wrap to press the sugar and cinnamon into the dough. Remove the plastic wrap and beginning at one end of the rectangle, roll the dough up firmly. Place the dough with the loose end down in a lightly sprayed loaf pan.
  7. Cover the loaf with a towel or a lightly greased piece of plastic wrap and allow to rise in a warm spot for 25 minutes.
  8. Heat the oven to 350 degrees.
  9. Bake loaves for 20-25 minutes or until loaves are golden brown.


* I have used unbleached all purpose flour in a pinch and it works just fine.
