Peanut Butter Finger Cookies

Enjoy a rich peanut butter finger in cookie form! Packed with a rich peanut flavor and topped with a cream chocolate frosting, these cookies are to die for!

Do you love eating peanut butter fingers? I do!!

They are so good and delicious. Since I’ve started training this past week in running and increasing my running mileage, my appetite has gone crazy! While I’ve been good about not giving in to my cravings, tonight I knew I was going to give in.

I craved something with peanut butter. But I made them in cookie form. Because I was craving those too.

Make sure you have a buddy that can help you stop if you need it. You may need an intervention. One cookie won’t be enough!

Peanut Butter Finger Cookies


  • 1 cup butter
  • 1 cup crunchy or creamy peanut butter
  • 1 cup white or coconut sugar
  • 1 cup brown or coconut sugar
  • 2 eggs
  • 2 1/2 cups all purpose unbleached flour or white whole wheat flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt


  1. Preheat the oven to 350 degrees. Lightly grease a cookie sheet.
  2. On medium speed in a large mixing bowl, cream together the butter, peanut butter and sugars.
  3. Turn the mixer to low and stir in the eggs, stopping to scrape the bowl if necessary. Slowly stir in the flour, baking powder and baking soda and salt. Mix until dough is well blended.
  4. Drop dough by tablespoon onto the cookie sheets, leaving two inches of space between cookie.
  5. Bake at 350 degrees for ten minutes, or until the edges of the cookie begin to brown and the cookie cracks. Remove from oven and allow to cool for several minutes on the cookie sheet before moving to a cooling rack. Allow cookies to cool completely before frosting.


For Cookie Frosting: In a mixing bowl, cream together 1 cup butter, 1/2 cup cocoa powder, 5 cups powdered sugar, 1 teaspoon vanilla and 3-4 tablespoons of milk. Once smooth, turn off cookies and frost a generous layer on each cookie.
