If you are looking for a quick and easy crock pot recipe, this is it. This time of year I always seem to be reaching for easy meals that can be prepped in a few minutes and go on the table in a flash.

On a morning run over the weekend, I caught glimpses of fall trying to peek it’s way out as I ran up the canyon. A few trees were starting to turn gold, red and brown. Fall is trying to come, and with that will come the need for warm meals.

This crockpot meal isn’t exactly considered a warm weather meal, and it isn’t a cold weather meal either making it perfect for these transition days.

I wish the run had been as consistent. Just as soon as I caught that beautiful glimpse of fall, a downpour came down. My dog running partner wanted nothing to do with the rain. She’ll run through rivers and fast moving creeks, but when it comes to sprinklers and rain she becomes a little wimpy. She pulled hard on her leash not wanting to heel and half dragging me down the mountain as I tried to make my way down the mountain in one soggy piece. It was a fun run, but we came home soaked with running shoes squeaking. This meal was the perfect way to end the day.

Do you really put whole wheat tortillas in the crock pot? It says combine all ingredients but I assume you didn’t mean that.

No, I don’t. I put the chicken mixture into the tortillas after the chicken mixture has finished cooking. Thanks for writing to get that clarified. Enjoy, it’s one of our family favorites! have a great holiday season.
