Rosemary Parmesan Chicken and Potatoes

A simple and easy weeknight meal ready in about an hour. Rosemary and parmesan complete this chicken and potatoes recipe perfectly in every bite!

Tonight I’m sharing one of our favorite weeknight chicken dinners with you. I’m teaching our two year old to share, so naturally I must do the same. All the childrens books tell you to teach by example, right? This chicken recipe is the perfect meal for that.

You have got to try this! It is absolutely delicious and so good tasting. I love rosemary and parmesan and this recipe just ties those two flavors together. You can whip it up in just minutes, then put it in the oven and go back to helping your oldest daughter with her homework while getting mad at your son for teaching your two year old to say “shutup.” You can also run outside to save your brand new sod from two dogs that have decided to spend the afternoon digging it up.

Rosemary Parmesan Chicken and Potatoes

Yield: 6 servings

Ingredients

  • 6 chicken breasts
  • 1 1/2 pounds (approximately 6-8) red potatoes, cut into cubes
  • 1 cup baby carrots
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 tsp paprika
  • 3 tsp fresh or dried rosemary
  • 1 tsp minced garlic
  • 1/2 tsp black pepper
  • 1/3 cup grated parmesan

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large bowl, mix together the oil, salt, paprika, rosemary, garlic, and pepper until smooth. Add the chicken, potatoes and carrots to the spices and toss until well coated.
  3. Arrange the chicken pieces, potatoes and carrots in a 9x13 inch pan. Cover with foil and place in oven. Cook at 400 degrees for 45 minutes to one hour or until potatoes are tender and meat is no longer pink. Uncover chicken, then sprinkle parmesan cheese evenly over the mixture. Continue cooking until cheese is melted. Remove from oven and serve.

    I can’t wait to try this recipe out and I pinned it so I wouldn’t forget it. I love rosemary and cook with it quite a bit so I am going to try using some boneless skinless chicken thighs since the grandchildren like them better than the breast. Thanks for sharing.
