Campbell’s Tomato Soup Copycat with Grilled Cheese Croutons

The secret to how to make Campbell’s Tomato Soup from home is simple and easy. Top your soup with some grilled cheese croutons and you’ve got a winning lunch or dinner!

My husband’s favorite lunch has to be popping open a can of Campbell’s Tomato Soup then dunking a grilled cheese sandwich in it. One of the reasons he loves it so much is that it doesn’t have an overwhelming tomatoey taste. To him it tastes more like a cream of tomato soup which he loves.

Since I like to cook healthier for the family opening a can of Campbell’s at $1 a can isn’t the most economic idea. And some of the tomato soup varieties contain high fructose corn syrup and wheat flour so I couldn’t serve it up to my gluten free friends or family.

This recipe can easily use your homemade canned tomatoes or store bought canned tomatoes. Add a few spices and a splash of cream and your done in minutes!

Ingredients

    For the Soup:
  • 2 tbsp olive oil
  • 1/2 yellow onion, chopped
  • 1 clove garlic, minced
  • 2 tbsp unbleached all purpose flour (for gluten free, use 2-4 tbsp cornstarch)
  • 1 28oz can crushed tomatoes, with juice (you can use homemade canned equivalent)
  • 1 cup low sodium chicken broth
  • 1/4 tsp basil
  • 1/4 tsp thyme
  • 1/2 cup heavy whipping cream (can use almond milk as substitute)
  • Salt and Pepper to taste
  • For the Grilled Cheese Croutons
  • 4 slices multigrain or gluten free bread
  • Cheddar cheese or dairy free cheese
  • Butter or non dairy spread

Instructions

    To Make the Soup:
  1. In a saucepan, add the oil. Heat to medium high and saute until the onion is soft--approximately 3-5 minutes. Add in the minced garlic and continue cooking another minute. Slowly sprinkle in the flour and continue whisking until blended.
  2. Add the tomatoes with the juice and broth to the pan. Mix with the onion and garlic mixture until blended well. Add in the basil and thyme. Bring the mixture to a boil, whisking frequently until the mixture thickens--approximately 5-7 minutes. Remove from heat and stir in the cream or milk.
  3. In batches, pour the tomato soup into a blender and blend until mixture is smooth. Serve with grilled cheese croutons or grilled cheese sandwiches.
  4. To Make the Grilled Cheese Croutons:
  5. Place a frying pan on the burner of the stove you were making the soup on. Allow pan to heat. While pan is heating, butter one side of each slice of bread. Make a sandwich with the bread with the buttered sides of the bread on the outside and the cheese slices on the inside of the sandwich. Place the sandwiches on the griddle and allow to cook until the bread on the stove side becomes browned. Flip sandwich and cook on the other side until browned. Remove from heat, place sandwiches on a cutting board. Using a knife or pizza cutter, cut the bread into 1/2 inch to one inch cubes. Serve on top of soup. (Hint: You can make the grilled cheese croutons before making the soup if you would like.)
