Apple Pecan Pancakes

Whether you loathe or love Valentine’s Day, it never hurts to show the person you love them any time of the year. Our family loves Sunday breakfast, and I show my love for them by making something other than cold cereal. I would be perfectly happy pouring a bowl of cereal every day, but sometimes something special is needed.

These apple pecan pancakes are perfect for breakfast in bed for your special someone this Valentine’s Day or for enjoying as a special breakfast. (Hint: This weekend).

Make a stack and grab the syrup because you won’t be able to enjoy just one. They are amazing–and good for you too! We also made a vegan version, so look at the notes for substitutions.

Apple Pecan Pancakes

Yield: 16 pancakes


  • 2 cups whole grain flour
  • 1/4 cup sugar (we used coconut)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ginger
  • 1/2 tsp cloves
  • pinch of salt
  • 2 eggs
  • 1 3/4 cup milk (can substitute almond, soy or rice)
  • 3 tbsp butter or non fat plain greek yogurt (for vegan use non dairy butter like Earth Balance)
  • 2 cups peeled chopped apples
  • 1/2 cup chopped pecans


  1. In a large bowl, stir together the flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and salt until combined.
  2. To the bowl add the eggs, milk and butter or yogurt. Stir until smooth.
  3. Fold in the apples and pecans.
  4. Preheat a griddle to medium heat. Pour pancake batter by large spoonfuls (approximately 1/4 cup of batter) on to the griddle. Cook until edges are cooked and the middle of the pancake begins to bubble. Flip, cook an additional minute or until browned. Remove from griddle and place in warm oven until ready to serve.
  5. Serve with agave nectar or maple syrup. Top with additional pecans and apples if desired.


Substitute walnuts for pecans if desired.
