Crockpot Lemon Pepper Chicken

A delicious crockpot recipe for lemon pepper chicken that comes together in minutes and features lemon, honey, pepper and thyme. 

Everytime I teach about healthy eating, the ONE thing people ask for is… more time. 

But it’s actually the one thing that you don’t get more of. There are only 24 hours in a day. You cannot add in more time and there are no more ways to add extra hours. Period.

So the only thing that you can do is utilize the hours you have. Eating healthy is a priority, but I don’t have time to make a nice meal every night that requires chopping, browning, dicing and other -ing terms. You know, work”ing” terms. Work, now that’s another topic for another day.

Crockpot meals are my go to meals for busy nights, lazy Sunday dinners, or nice breakfasts waiting for us in the morning. And they keep me healthy without having to work so hard to do it.

This crockpot lemon pepper chicken is no exception. It is absolutely delicious and perfect for those days you only have a few minutes to throw a dinner together.

Crockpot Lemon Pepper Chicken

Yield: 6 servings

A delicious meal that comes together easily in just a few minutes. Leave it all day, come home to a wonderful meal filled with lemon, honey and pepper and thyme.


  • 1 whole chicken, 6 chicken breasts or 2-3 pheasant or hens
  • 6-8 Yukon gold potatoes, cut into quarters
  • 1 pound baby carrots (one small bag)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • Zest of one lemon (for a stronger lemon flavor, you can up this to two lemons)
  • For the glaze:
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 tsp pepper
  • 6 tbsp lemon juice (or 2-3 lemons, juiced)
  • 1/4 cup honey
  • 2 tsp thyme (or 3-4 fresh thyme sprigs)
  • 1/4 cup parsley


  1. In your crockpot, place the chicken or birds, potatoes, onion and garlic, chicken broth and lemon zest. Place lid on crockpot and cook on high 4-5 hours or low 6-8 hours.
  2. Prior to serving, mix together the olive oil, salt, pepper, lemon juice, honey, thyme and parsley in a small bowl.
  3. Remove chicken from crockpot and remove chicken meat from bones. Serve chicken with potatoes and carrots. Drizzle desired of lemon mixture over chicken, potatoes and carrots.


To cut your prep time even more, grab a bag of pre cut onions and garlic from the frozen vegetable aisle. Just know if you use them once, YOU WILL NEVER GO BACK TO CUTTING VEGETABLES AGAIN. It is a marvelous time saver. I also buy my garlic and onion on sale, then buy a bunch and process them in my food processor so they are diced than freeze for later uses.
