Southwest Deviled Eggs–Chile Infused

Are you excited to woo your Easter guests with mayonaise, paprika and mustard filled deviled eggs–you know, the SAME deviled eggs you make every year?

These Southwest Deviled Eggs get turned up a notch. Infused with cilantro, jalapeno and a little hot sauce your deviled eggs this year are getting a big flavor boost. And you’ll get a lot of compliments from the guests too. If your eggs make it to the guests. Mine made it as far as my mouth and stomach.

And don’t forget to make your hard boiled eggs this year using our simple Oven Baked Hard Boiled Egg method. You will never go back to using the stovetop again.

Southwest Deviled Eggs–Chile Infused

Ingredients

  • 8 hard boiled eggs, cooked and cooled
  • 1/3 cup nonfat plain greek yogurt
  • 1 green onion, thinly diced
  • 1 tbsp chopped jalapeno pepper, seeds removed
  • 2 tbsp cilantro, finely chopped
  • 1-2 tsp hot pepper sauce
  • 1 1/2 tsp ancho chile powder
  • 1/2 tsp paprika

Instructions

  1. Crack and peel hard boiled eggs, discarding shells. Slice eggs in half lengthwise. Arrange the egg whites on a serving platter. Place the egg yolks in a small to medium sized mixing bowl.
  2. Mash the egg yolks with the tines of the fork until roughly mashed. Stir in the greek yogurt, green onion, jalapeno pepper, cilantro, hot pepper sauce, chile powder and paprika. Stir until smooth and combined. Spoon mixture evenly into the eggs.
  3. Top with additional cilantro and chile powder if desired.
  4. Refrigerate until ready to serve.
