My summer runs are usually done really, really, REALLY early in the morning. I live near a mountain canyon, so the early mornings are brutal as a cold wind blasts you from the canyon. It’s only made better by the addition of the sun, but those first 45 minutes of the run until it comes up make me ponder why on earth I’m not still snuggled against my pillow and sheets.

Scheduling and hot weather are some of the main reasons I drag my arse out of bed that early. I have a persistent running partner who doesn’t tolerate long runs in the hot weather. Having three kids at home also makes it pretty tough to get out and run later in the day. So I opt to run when it’s still cool in the morning.

I love Clif bars in the morning but at $1 a bar and our tighter¬†budget this year I’ve had to cut back. This year, I’ve made up some of these, popped them in a bag in the freezer and pull them out and eat a few while I stretch. Then it’s off to the races, or to contemplate why in the world I am crazy enough to get out of bed so early in the morning.

  • 1 cup oats (quick or rolled are just fine)
  • 2/3 cup unsweetened toasted coconut flakes
  • 1/2 cup peanut butter, sunflower butter, or almond butter
  • 1/2 cup ground flaxseed
  • 1/2 cup raisins
  • 1 tsp cinnamon
  • 1/3 cup honey or maple syrup
  • 1 Tbsp. chia seeds (optional)
  • 1 tsp. vanilla extract

  1. In a bowl, mix all ingredients together until blended well. Form dough into golf ball sized balls.
  2. To store: Place balls in a plastic freezer bag to store. To thaw, remove balls from the freezer and allow to thaw at room temperature for several minutes.
