I can’t believe what a huge hit our three ingredient protein pancakes were. So now, we are introducing our high protein waffle egg breakfast. About a year ago this time I knew our Hawaii vacation was drawing nearer and those last stubborn few pounds were not coming off. Hello, I knew I would be spending a week in a swimming suit. I needed help!
When I looked at my diet and what I was eating I was shocked. There were some days that all I ate were carbs. I ate a waffle and fruit for breakfast, a bowl of cereal for lunch, a handful of crackers and some fruit for a snack and pasta with a little bit of chicken and vegetables for dinner. And maybe a few cookies for dessert. While lower calorie, it wasn’t what my body needed and I craved, craved carbohydrates and sugar all day long.
Once I started adding more protein to my diet I started noticing that I felt stronger on my runs, got a little bit of definition to my arms and wasn’t hungry and reaching for carbs all day long. Don’t get me wrong. I’m not the poster child for protein and I still have days that my carb loving self wins. And I was eating better grains. Most of the time I was eating whole grain pasta, whole grain waffles, etc. I just needed to conciously add more protein to my diet in order to have a more balanced diet.
I started with the protein pancakes and often ate some eggs for breakfast. But that gets old quick and I needed something more. I also noticed that my kids weren’t eating as much protein as they should be eating. I came across this recipe and thought it would be a great way to get my kids and myself excited about eating more protein.
These high protein waffle eggs are just the perfect thing for making sure the kids and myself get more protein. The eggs come out light and fluffy and they are perfect topped with a little bit of yogurt or fruit. Or syrup. For whatever reason my kids love syrup on their scrambled eggs. So why would syrup on an egg waffle be any different, right?
