I have a confession. I really, really don’t like cooking during the summer. I’m perfectly happy grilling outside or throwing together a salad that requires no cooking. But cooking is tough. There are only a few months of my favorite season and I like to enjoy every minute of them. No cooking for me. Trips to the pool, hiking, spending time with the kids, long runs–that is summer! But these Mediterranean grilled veggies made me rethink not cooking during the summer.
Today’s recipe is simple and easy to make and there are a number of ways to prepare the veggies. Pick your favorite way and you’ve got a simple and easy side dish.
I took the liberty of using a shortcut in this recipe. We used Simply Organic Mediterranean Herb Greek Yogurt Dip. It was perfect on top of the veggies. You can find Simply Organic at your local health food store. They are sold in packets. We have used ours in a number of different recipes:
