Chocolate Toffee No Bakes

Summer is half way done but cookies just sound delicious to me no matter what the season. These chocolate toffee no bakes are the perfect remedy for the heat. We enjoyed a few of ours fresh the night we made them, then popped the rest in the freezer and enjoyed a few more on the porch after the kids went to bed.

My day had just screamed headache from the beginning. My three year old seemed only capable of screaming my name in a high pitched shrill “Mommmmmeeeeeeeeeeeeeee!!!!!” all day long. I thought I was going to go insane, but luckily the cookies came to the rescue.

Some days just require cookies. And then more cookies.

And some quiet time on the porch with your favorite guy.

Chocolate Toffee No Bakes

Yield: 16 cookies

Serving Size: 1 cookie


  • 1/2 cup butter
  • 1/4 cup cocoa powder
  • 2 cups sugar (you can substitute other sugars here. I've made these twice, once with white sugar and the other with a coconut sugar/white sugar blend)
  • 1/2 cup milk
  • 1-1/2 tsp. vanilla extract
  • 3-1/2 cups quick oatmeal
  • 1 cup toffee baking bits


  1. In a large saucepan set to medium heat, stir the butter, cocoa powder, sugar and milk together. Bring the mixture to a boil, then remove the mixture from the heat and stir in vanilla, oats and toffee bits. Drop the dough by tablespoons onto sheets of waxed paper, then allow the cookies to harden.
  2. Store cookies in an airtight container for several days or in a Ziploc freezer bag in the freezer for up to one month.
