Apple Cinnamon High Protein Waffles

Our three ingredient power protein pancakes were such a hit that we had to follow them up with a new flavor. Okay that’s mostly true. I got kind of tired of the same protein pancakes so I decided to come up with a new flavor. I get bored of the same thing everyday pretty quick so I have to change it up and make a protein breakfast with a little bit of variety.

These protein waffles offer a little more variety which keeps things interesting and my palate happy. This is a very similar recipe, but very versatile too. I’ve tried it with rolled oats, flax seed, and quinoa and loved it either way. I also love that this recipe has no protein powder. I’m not a huge fan.

This recipe makes two waffles but I usually quadruple the recipe and freeze the rest of the waffles in a freezer safe bag so it will last me a couple of weeks. When I come home from a run I am hungry and I don’t want to whip up a breakfast and then WAIT! I can grab these out of the freezer, toast them or microwave them and they are ready to make their way to my belly where they belong.

Oh, and if you are a die hard pancake fan, you can make these just like the protein pancakes. They will turn out just fine.

Apple Cinnamon High Protein Waffles


  • 2 eggs, beaten
  • 1 tbsp applesauce
  • 1 tbsp flax, rolled oats (uncooked) or 1 tbsp cooked quinoa (love the nutty flavor of quinoa)
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla


  1. Preheat waffle iron according to manufacturers directions.
  2. In a bowl whisk together the eggs, applesauce, flax, rolled oats or quinoa, cinnamon, and vanilla until smooth.
  3. Pour into waffle iron and cook according to manufacturer. Remove from waffle iron when cooked. Serve with agave or maple syrup.


*These are great for the freezer. Place the cooked waffles in a Ziploc freezer bag to store. To heat, place waffles in a toaster or in the microwave. *Cooking time may vary since there are eggs involved. We have two different waffle irons and on one of our waffle irons the light will go off on the waffle iron and we have to cook an additional minute or two until the egg is cooked, the other is spot on and we can remove it as soon as the light goes off.
