Allergy Friendly Waffle Recipe {AIP, Paleo, FODMAP, Gluten Free, Dairy Free}

At first glance, Jimmy Fallon’s “ew” might come to mind when thinking of an allergy friendly waffle recipe. And I get it. I do. It was mine too.

But this waffle recipe is amazing. AMAZING.

I’m not just saying that. The waffles are light, fluffy and have perfectly crispy edges with a hint of sweet in every bite.

These waffles are easy to freeze and you can pull them out of the freezer and place them in the toaster for a quick and easy breakfast. We even used a rolling pin to flatten some of the waffles out and added some bacon and eggs inside to make an allergy friendly waffle roll up. An easy and quick breakfast!

You might live in an allergy filled world. But your food doesn’t have to taste like you do. These waffles won’t make you miss your old recipe at all!

The BEST Allergy Friendly Waffle Recipe {AIP, Paleo, Gluten Free, Dairy Free}

Total Time: 15 minutes

Yield: 8 waffles

Serving Size: 2 waffles


  • 1 cup milk (substitutions are just fine)
  • 3 eggs (AIP use three bananas in place of the eggs)
  • 1 tbsp coconut sugar or sugar
  • 1 tsp vanilla extract
  • 2 tbsp melted butter, coconut oil, ghee or oil
  • 1/2 cup coconut flour
  • 1/2 cup tapioca or arrowroot flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • Pinch of salt


  1. In a large mixing bowl, whisk together the milk, eggs, sugar, vanilla and butter or oil until smooth. Add in the coconut flour, tapioca or arrowroot flour, baking soda, baking powder, and salt. Stir just until smooth.
  2. Heat waffle iron according to manufacturers instructions. Brush waffle iron with oil or butter. Pour approximately 1/4 cup of batter onto each waffle iron. (You may need to adjust the amount of batter depending on the size of your waffles) Close and cook according to manufacturers instructions.
  3. Remove waffles from iron, serve immediately or allow waffles to cool to room temperature before placing in an airtight container or Ziploc bag.
  4. To make rollups: While waffle is warm, roll with a rolling pin until flat. Fill with bacon, scrambled eggs, veggies, fresh fruit or any other combination you like. Place toppings in a thin strip along the waffle. Roll up and serve.

      My sister in law can have eggs and is on aip so I made these for her. Some aip can have eggs. My sister in law cannot have tapioca most while aip can. Everyone has their own little thing they can and can’t have. Sorry you were not able to use the recipe. I hope you get feeling better soon and start feeling great. I know it’s probably been a tough road for you. Keep in touch!

      I told my sister in law and we reworked the recipe this weekend to be true AIP. Just use bananas in place of the eggs. They will still turn out great!!
