Slow Cooker French Dip Sandwiches

It’s winter time and the slow cooker gets a workout this time of year. One of my husband’s favorite sandwiches is the french dip sandwich.

This slow cooker french dip sandwich is easy and simple to make and takes very little effort on my part to make.

I love it for a simple weekday meal or a nice Sunday dinner. Cooking the meat in the slow cooker makes it nice and tender and toasting the bread gives it that crispy taste you want. It’s very easy and adaptable. We serve it with a salad and call it good.

Slow Cooker French Dip Sandwiches


  • 1 3 lb. beef roast
  • 2 tbsp olive oil
  • 1, 1 oz package dry onion soup mix
  • 1 c. water
  • 1 can beef broth or beef consumme
  • Salt and pepper to taste
  • 12 buns
  • Swiss, provolone, or mozzarella cheese, sliced


  1. In your slow cooker, place all ingredients (minus the buns and cheese) Cook on low for 6-8 hours.
  2. When ready to serve, slice buns lengthwise. Place buns on a cookie sheet under the broiler until lightly browned. Remove from oven, on one side of the bun place meat, then top with cheese. Move back to the broiler for 1-2 minutes until cheese is melted. Remove from oven, place the top of the bun on the top of the sandwich than serve with salad. Spoon the au jus from the slow cooker into bowls to dip the sandwich into.
