Whole Wheat Carrot Cake Waffles with Maple Cream Cheese Glaze

Tis the season for spring holidays! I am soooo excited. The snow has been reduced to little tiny little white spots on the side of the road that get smaller and smaller each day I run by them. Spring is here and today as a member of the Secret Recipe Club we’re celebrating spring holidays with a bunnies and leprechauns celebration.

Today I’m highlighting I Am a Honey Bee. I’ve had the pleasure of highlighting her in the past and am excited to share some of her best recipes for the spring holidays with you. Today I’ll be sharing another breakfast recipe–whole wheat carrot cake waffles with a maple cream cheese drizzle. They were delicious and the kids loved that they thought they were eating what bunnies ate. (Elaborate stories of how the Easter bunny eats the same thing to get a child to eat orange stuff in their food is completely and totally acceptable. It works).

Whole Wheat Carrot Cake Pancakes with Maple Cream Cheese Glaze

Yield: 4 waffles

Ingredients

    For the Waffles:
  • 1 cup white whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp table salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 1/8 tsp ground ginger
  • 1 large egg
  • 2 tbsp packed brown sugar
  • 1 cup milk
  • 4 tbsp butter, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups finely grated carrots
  • For the Glaze:
  • 4 oz cream cheese, at room temperature
  • 2 tbsp maple syrup
  • 1 cup powdered sugar
  • 2-3 tbsp milk, for thinning

Instructions

    To Make the Waffles:
  1. Preheat waffle iron according to directions.
  2. While waffle iron is heating, stir together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a bowl. Set bowl aside.
  3. In a separate bowl whisk together the the egg, sugar, milk, melted butter, and vanilla extract until smooth.
  4. Add the wet ingedients to the dry ingredients and stir just until combined. Fold in the carrots.
  5. Pour batter onto lightly greased waffle maker (see recommendations according to your individual waffle maker directions). Cook according to waffle maker directions. Keep in warm oven while you make the glaze.
  6. To Make the Glaze:
  7. Beat the cream cheese in a bowl for 1-2 minutes until light and fluffy. Slowly drizzle the maple syrup in, continuing to stir. Reduce mixer speed to low, then add the powdered sugar and milk until glaze consistency is reached.
  8. Drizzle the glaze over warm waffles. Serve.

  10. I almost made carrot cake pancakes for dinner tonight, but my carrots were too sad. I’m much more a waffle kind of gal so maybe it’s a good thing! 😉
