Gluten Free Mini Victoria Cakes

Gluten free mini victoria cakes look just like Little Debbie and Hostess desserts! Now your kids can enjoy their own gluten free little debbie treat or gluten free hostess treat just like their friends! 

It’s back to school time. We’ve been in school for three weeks now and the kids are B-O-R-E-D with ham and cheese sandwiches, peanut butter and jelly sandwiches and my “creative lunch creations.” (AKA whatever is leftover in the house because Mom has to go shopping).

Today as a member of the Secret Recipe Club I’m featuring the fabulous blog Baking Fanatic. This blog is FULL of amazing recipes but these were the ones that caught my eye for some creative allergy friendly lunches and treats:

Today I’m featuring these adorable mini victoria sandwich cakes. I used a gluten free baking mix to make them gluten free. They look just like those adorable Little Debbie and Hostess cakes! Your kids can now enjoy the same treats. And I love that these can be frozen so you can save them for future lunches (if they last that long!)

Victoria cakes are sponge cakes and are delicious to eat and enjoy! Substitute your favorite gluten free flour blend (just know that results may vary alittle bit).

Gluten Free Mini Victoria Cakes


  • 3 eggs
  • 3/4 cup + 1 tbsp (175g) unsalted butter, softened
  • 3/4 cup (175g) gluten-free self-raising flour
  • 1.5 tsp gluten-free baking powder
  • 3/4 cup (175g) caster sugar
  • Zest of one lemon (optional)


  1. Lightly grease a muffin pan, mini cake pan or brownie square pan. Set aside.
  2. Place all ingredients (eggs, butter, flour, baking powder and sugar (and lemon zest, optional)) into a bowl. Beat well with a wooden spoon for approximately one minute until fully mixed.
  3. Transfer the mixture to the cake pans, filing each cup approximately just over half way full. Bake the cakes at 350 degrees for 13-18 minutes or until cake becomes golden brown and springy.
  4. Remove from oven, allow to cool for several minutes before removing from the pans and moving to a cooling rack to finish cooling completely.
  5. Cut cakes in half, add filling, then glaze.


Victoria cakes are sponge cakes. Since you are using gluten free flour the less mixing the better. Just mix the mixture together until blended
