BBQ Chicken Salad with Foster Farms

This time of year is just busy. I wake up at 4:30 and am off for a morning run. And from there on out the rest of the day is spent at work, running kids around, homework, and grading papers late into the evening. Dinner during the school year is simple and easy. Simple, healthy comfort foods are important to our family.

With some days being hot and others being cooler, fall can never seem to make up its mind. Simple comfort foods like salads are easy to prep before heading off to work. After arriving home, I take out whatever meat is in the crockpot and add it to the salad.

Over the years I’ve changed the way that I make meals. When I was first married I couldn’t cook…so most dinners were eaten out. We often eat slow cooker meals, salads, and simple casseroles that can be frozen or made fresh. Most of our meals take very little prep time and are kid friendly.

BBQ Chicken Salad with Foster Farms

Ingredients

  • • 6 cups chopped lettuce
  • • 2 Foster Farms Simply Raised boneless, skinless chicken breasts cooked and cut into bite sized pieces
  • • 2-3 slices bacon, cooked and cut into bite sized pieces
  • • 1 tomato, diced
  • • 1 cup corn kernels
  • • 1 cup black beans (cooked, or drained and rinsed if canned)
  • • 1/4 cup red onion, cut into tiny bite sized pieces
  • • 1/4 cup cheddar or monterrey jack cheese, shredded
  • • 1/4 cup BBQ sauce
  • • 1/4 cup ranch dressing
  • • Tortilla strips, for garnish

Instructions

  1. To assemble the salad: Layer the romaine lettuce in a large salad bowl. Top the salad with the chicken, bacon, tomato, corn, black beans, onion, and cheese. In a small bowl mix together the BBQ sauce and ranch dressing than drizzle over the salad.
  2. Toss the salad prior to serving, garnish salad with tortilla strips
