Chocolate Rice Krispy Treats are so gooey and delicious that we even included an allergy friendly version for those who have food allergies.

The weekend. In college if I wasn’t working my weekend shift at the hospital, I was sleeping in. The hardest part of the weekend would be getting some laundry done while studying for Monday’s test. A quick trip to the grocery store might be thrown in there too as well as a trip through the car wash and a quick vacuum of the car. Then it would be off to the gym,  then home to ready myself for a date or going out somewhere with the girls. The night started around 9PM and often didn’t end until 1am.

The weekend started at 7AM when I went to pick up my daughter from her Dad’s so I could bring her back home to do her hair and makeup for her school play photo shoot that morning at 8:30AM. Then it was squeezing in a workout before picking up my son at noon from boy scouts and making him a quick lunch before his Dad picked him up for his basketball game. After he was picked up it was my turn to get ready and head off to the game. After it was the grocery store, Costco, gas in the car and Target with a few side trips thrown in to help run kids various places before meeting up with some friends at 7PM and calling it a night by 10:30PM as we all whined about how we could stay out until 1AM easily in our college days. And then it started all over again the next morning.

When the kids got home Sunday night I made sure that a treat was waiting for them. It’s been a wierd tradition to try the special edition Oreo flavors that come out. We tried Peeps Oreo’s and they were so good that the box didn’t make it more than an hour. I highly suggest grabbing a box and trying them. I only got to eat the filling but the filling was so good.

But for now, I’m switching gears back to chocolate. Because chocolate is my fifth food group. Since I have to usually do some modifications to my food, I’ve included those in the recipe too so that anyone can enjoy this recipe.

Chocolate Rice Krispy Treats + Vegan Version

Yield: 12 squares

Serving Size: 1 square


  • 4 tbsp butter (can substitute dairy free if you would like)
  • 1/4 cup cocoa powder
  • 1 package miniature marshmallows (for vegan version, use Dandies marshmallows)
  • 5 cups rice krispies
  • 2/3 cups mini chocolate chips (for dairy free version use Enjoy Life)


  1. Lightly grease an 8x8 inch pan then set aside.
  2. In a large pan, melt the butter and marshmallows over low heat. Stir until melted, then add the cocoa powder, whisking until smooth.
  3. Remove the skillet from the heat, stir in rice krispies and 1/3 of the chocolate chips.
  4. Pour the mixture into the baking pan and spread until smooth. Sprinkle the remaining chocolate chips evenly over the top.
  5. Let the mixture set for about 30 minutes before cutting and serving.
