Chocolate Chip Banana Bread + Food Allergy Substitutions

Life is just full of fun this week!

Soccer season is starting back up again and this year I’m prepping for it. I’ve opted to pack two quilts, an umbrella, two beanies, hand and foot warmers and I even found these body warmers! I will NOT be complaining that I’m sitting through soccer games in the freezing cold this year! And I won’t be one of those soccer moms who in years past has parked close enough to the field and then pops her head out of the warm car to cheer when the team scores a goal and then jump back in the warm car. Nope I’m going to brave the elements this year. I’m ready for spring soccer!

While I brave the elements with my son, I’ve also got to brave my inner girl side by trying to figure out costume hair and makeup with my daughter. She is playing the wardrobe in her school production of “Beauty and the Beast.” And hair and makeup are TOTALLY out of my element. The director had a vision for my daughters hair and makeup. I didn’t really know what that “vision” was, so I opted for YouTube and Pinterest to help me out. The director only said she wanted “extravagant” hair and makeup. So we looked and I came up with something I thought would fit as extravagant. It didn’t fit the vision so the director redid my vision and now I’ve got to learn the new vision of what the hair and makeup should be by the time the play starts. Yikes! When the director found out whose Mom it was trying to do the hair and makeup she did tell my daughter that she thought they found a wig that would work for her part. Win for me, then all I have to do is a couple of braids.

My youngest daughter got to come into work with me for alittle while one morning. She loves coming in to Mom’s work…mainly because she gets pretzels. It’s my secret hidden stash for my students. While she was there she had to color and color. She felt that my office wasn’t “decorated” enough…aren’t lice posters and posters on being good to your teeth considered “decoration?” She wasn’t buying it. So she made her own picture–this one to include head bumps. It’s all about education. Now there isn’t one corner you can turn in my office and NOT be educated. Lice, head bumps…you name it, I’ve got a poster for it.

Since it’s easy to see our lives are hectic as ever, we opt to fuel ourselves with some (healthier) chocolate breakfasts. This meal is ALL about the balance in life of chocolate and healthy (banana!)

The bread is moist, delicious and has a rich chocolate and banana bread flavor in every bite. It doesn’t have an overwhelming banana flavor for those of you who don’t want an overwhelming banana taste. It’s just good, it’s easy to make and you will want to put this on your list of breads to make!

Chocolate Chip Banana Bread + Food Allergy Substitutions

Yield: 1 loaf

Ingredients

  • 1 cup unbleached all purpose flour, whole wheat flour or gluten free flour blend
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 large bananas, mashed (need about 1 1/2 cups mashed)
  • 1/4 cup butter, melted and cooled (can substitute dairy free)
  • 1/4 cup milk or greek yogurt (can substitute dairy free)
  • 3/4 cup brown or coconut sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup mini semisweet chocolate chips (can substitute dairy free)

Instructions

  1. Preheat oven to 350 degrees. Lightly grease one 9x5 inch loaf pan then set aside.
  2. In a bowl, mix together all ingredients until smooth. Mix in 3/4 cup of the chocolate chips, reserving the other 1/4 cup for later.
  3. Pour the batter into the loaf pan. Sprinkle the remaining 1/4 cup of chocolate chips evenly over the top.
  4. Bake the bread at 350 degrees for approximately 55-65 minutes or until a toothpick inserted into the middle of the loaf comes out clean.
  5. Remove from oven, allow bread to cool before slicing and serving.
