Instant Pot Turkey Chili + Cookie Dough For Kids Lunch?

Just starting out using the Instant Pot? Try this delicious Instant Pot Turkey Chili!! Great flavor and done in about 30 minutes! 

This week has continued to be a whirlwind of emotions as we have continued to be a roller coaster with our feelings. Hard times come to every family and we appreciate everyone who has reached out and helped our family this week. We also had the flu bug hit the house and today, my littlest one woke with an earache. Work has been busy, school work has piled up and so have the dishes in the sink. I get to tackle those today.

I feel like it’s been one thing to another to another. From one fire to another to another. One activity to another to another. The schedule keeps filling up but I’m trying to juggle everything.  But it hasn’t been all bad. We had a lot of fun activities rolled in to a busy week too. This week I got to attend Penguin Play n’ Learn Day with my first grader. We had lot’s of fun!!

And one son after deciding it was a pint night because he was having a really tough time opted for his pint to be a tub full of edible cookie dough. He opted to take it to school as a lunch so he could share with his friends. Pint nights are better with friends.

By the end of the week, I was getting worn out so a movie night was long overdue. I got to watch my nephew while my sister went off to a work party. He is autistic and it is always so fun to see what he’s been learning. He’s four and I got super excited when I tried to feed him a bite of food and he turned around to me and said “NO!” I got really excited and he looked at me like I was crazy. So I decided that after I went all crazy excited at his new accomplishment I would calm myself down with a movie. We got him hooked on 3D movies. He was so into it! And then he fell asleep.

The one person who did NOT fall asleep had a very important job. she was waiting patiently for someone to stop holding the popcorn bucket so she could have a bite. Or two or three or even the whole bucket if she was really lucky and could eat it fast enough that she didn’t get caught. She wasn’t so lucky last night. The popcorn was too good and there wasn’t much left for her.

For the past few months I’ve seen post after post toting how wonderful the Instant Pot is. So I decided to finally buy one. I have to be honest. I didn’t feel after making this recipe that I was going to be a believer of the Instant Pot. Yes, it saves time, but I could’ve made this recipe on the stovetop in the same amount of time. And most of the time I just open cans and throw it into the slow cooker and forget about it until dinner. But I’m not going to give up. I’m going to keep trying a few more recipes because you can cook a ham in 30 minutes (or something like that) and that’s way easier and nicer than the oven or a roaster pan.

So I’m NOT giving up on you Instant Pot. I’m going to try a few more recipes and then decide if it’s worth the hype.

In the meantime, I do have to admit I LOVED the flavor of this Instant Pot Turkey Chili. It was so good to set it and not have to come back and stir every few minutes like the stove top version.

Instant Pot Turkey Chili

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 4 servings

Ingredients

  • 1 lb lean ground turkey
  • 1/2 onion, chopped
  • 1 package chili seasoning
  • 1 can (14.5 oz) petite diced tomatoes
  • i can kidney beans, undrained
  • 1 can black beans, drained
  • Shredded cheddar cheese for topping
  • Tortilla chips, or cornbread for topping

Instructions

    To Make This Recipe in the Slow Cooker:
  1. place all ingredients in the slow cooker and set heat to low for 6-8 hours or high for 4-5 hours.
  2. To Make This Recipe in the Instant Pot:
  3. Set the Instant Pot to "saute." Cook the ground turkey and onion until turkey is browned and cooked.
  4. Place the remaining ingredients in the pot. (Note, I do not usually drain my meat for this recipe as I like a little more flavor in my chili. You can drain your meat and return it to the pot with the remaining ingredients if you would like).
  5. Once all ingredients are in the pot, mix with a spoon until mixed well. Place the lid on the Instant Pot and set the valve to "sealed."
  6. Press the "soup" button and then set the timer for 15 minutes.
  7. Once the soup is done, turn the valve to "quick release."
  8. Serve the soup with shredded cheese, tortilla chips, cornbread or cornbread crumbles for topping.

Notes

This recipe can easily be doubled for larger groups or families.
