Chicken Pot Pie Pasta + Taekwondo Pays Off!

I seriously am having trouble believing that school is out! May felt a lot like this:

So true. From choir concerts to band concerts, mother’s day programs and all the last minute things the kids needed it has been absolutely CRAZY!!!

Cooking has been an afterthought but then I went to Target. I found this mini Le Creuset looking bowl and I had my cooking bug back.

Sort of. It was hot outside so I made it as far as a pasta salad. But it was a good pasta salad and one that the kids really liked. It’s like winter comfort food meets summer. This chicken pot pie had all of the flavors of winter like a creamy sauce, chicken, peas and carrots. It was delicious! I made mine in a dairy free version and was equally impressed with the way that it turned out.

And you don’t have to have a mini le creuset for this recipe. I just needed some cooking help. And this definetely helped. I also found out the mini le creuset is NOT microwaveable or oven safe after (of course) I tried to reheat the salad in the microwave.

Tonight was also a fun night with the kids. My youngest and I were in charge of grocery shopping together. She was CRAZY in the store. Does shopping look like this for your family? I always feel like I’m taking more stuff OUT of the cart when I go to check out then I have IN my cart.

My son came home from taekwondo all excited to show me a new move. The problem is my daughter took taekwondo (see story below) and so whenever SHE came home excited from taekwondo it usually involved some painfully painful move.

Tonight he sat on my back on the sit and reach to get me to reach farther. The problem is I have NEVER touched my toes and the pain was excruciating. I personally think the sit and reach needs to be done away with for us less flexible people. My sit and reach length has remained the same for over 30 years now. I think I rest my case when my PE teacher said I would improve. Some of us DON’T.

My daughter came home from babysitting and let me know all about how awesome the boys that she watched were tonight. When she told me that they gave her a rough time going to bed, she said to the boys that she knew taekwondo and could easily help them get ready for bed. Of course, boys being boys said, “Show me! I dare you!!” So she showed them a half lock? in taekwondo (nicely of course) and took each of them to the ground. They of course then had to practice doing it on each other but they went to bed with no problems.

Her taekwondo education continues to pay off.

okay. Back to pasta. I am a huge fan of this chicken pot pie pasta and will probably be making this a lot this summer. It was so simple and easy!

Chicken Pot Pie Pasta

Yield: 4 servings

Serving Size: 1 serving


  • 2 tbsp. butter (can substitute dairy free)
  • 2 celery stalks, diced (optional)
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 1/2 cups frozen mixed vegetables (we did corn, peas, beans and corn blend)
  • 2 tbsp. all-purpose flour (can substitute gluten free)
  • 1 cup chicken broth
  • 1 cup heavy cream (can substitute dairy free)
  • 10 oz. egg noodles, cooked according to package instructions (can substitute gluten free)
  • 1 1/2 cup cooked shredded chicken
  • Salt and pepper to taste


  1. Cook chicken and pasta. Set aside pasta and shred chicken, then set aside.
  2. In a skillet, melt the butter. Add the celery, onion, garlic and frozen mixed vegetables. Cook on medium heat until cooked thorougly (approximately 2-3 minutes)
  3. Stir in the flour, chicken broth, and heavy cream. Bring mixture to a boil. Once mixture is to a boil, reduce heat and stir occasionally until mixture thickens (approximately five minutes). Stir the pasta, chicken and vegetables together. stirring until combined. Add salt and pepper to taste. Serve.
