Have you ever been to the grocery and seen a bag of stringy looking things called “broccoli slaw”? Well pay attention! It might not look like much on its own—just a collection of narrowly diced vegetables tossed together, but it’s a delicious treat waiting to happen.

If you haven’t tried it, it’s time to give broccoli slaw a second look because, with a little creativity, it can become a quick and easy lunch that’s delicious and packed with flavor.

What is broccoli slaw? It’s thinly sliced broccoli (obviously), carrots, and red cabbage, and it’s full of nutrients. In fact, a serving is filled with enough Vitamin C and Vitamin A to nearly meet your recommended daily amount. It also provides some fiber—all while being vegan and grain-free!

To turn this bag of raw veggies into a delicious lunch, an appetizing side dish, or a quick snack, all you need are some simple ingredients, many you probably already have on hand.

This recipe calls for a dressing made from tahini (which is simply ground sesame seeds), lemon juice, and salt and pepper. That’s it! That’s all you need to transform broccoli slaw into a meal. The healthy fats in the tahini help you to absorb the nutrients in the veggies, too. It’s like this flavor combination was made to go together!

You can, of course, experiment with the flavor and make it your own. Onion powder, smoked paprika, and other seasoning blends let you adapt this to the dish of your choice or simply give it a little kick to elevate your lunch experience.

Traditional coleslaw is laden with processed ingredients and added sugar. This healthy and flavorful alternative delivers the crispy crunch of fresh vegetables and the beautiful array of color without the less desirable elements.

You can make this dish come together even faster if you prep your lemon tahini dressing ahead of time. It’s so good that I like to keep some on hand anyway. I use a ratio of 3-to-1 tahini to lemon juice, but feel free to adjust it to your own taste. A small blender like a Nutri or Magic Bullet whips these ingredients together in seconds. Then you can store it in the fridge.

It’s an inexpensive, flavorful, nutrient-dense meal you can toss together in minutes. What’s not to love?


If you cannot find broccoli slaw in the grocery store, you can use fresh cabbage/broccoli or whatever you’d like to make it yourself. Instead of using a knife, consider using a blender to chop/dice into slaw using the “wet chop” method. It will save you a ton of time.

How do you do it?

  • Simply add the ingredients you’d like to a blender along with a liberal amount of water.
  • Use the “pulse” button or turn it on for a split second. Don’t turn on too long as to not puree.
  • Repeat this until all veggies are desired shape/size.
  • Drain the water using a fine mesh colander.

It won’t come out EXACTLY like the store, but it’s not bad.

  • 1 lb bag of store-bought broccoli slaw (may have added carrots, cabbage, etc. – this is good!)
  • * 3 tbsp of tahini
  • * 1 juiced lemon without seeds
  • * Salt and pepper to taste
  • * Additional spices if you’d like (smoked paprika, onion powder are great)


  1. Mix the dressing beforehand or pour all ingredients into a large bowl.
  2. Use a spoon or your hands to make sure all of the slaw is evenly covered.
  3. Season with salt and pepper (and any other spices you want)
