Grilled French Toast and Peaches + Running Injury AGAIN!

The dog days of summer are upon us and this grilled french toast and peaches recipe will keep you happy through the heat!

I am absolutely frustrated. For the past year, I’ve struggled with running injuries on my right side. First it was pain in my hip on the right side. Then it moved to my shin and I was out six weeks with a stress fracture. Now it’s pain on the middle inside of my right foot, diagnosed as PTTD. I’m out AGAIN!

I’ve gone to chiropractors, physical therapists, changed out shoes, worn braces and orthotics, and now I’m going to call an old friend and running coach to evaluate my form. It’s just frustrating that the pain is always on my right side, but in one years time my miles have gone from 7:45 min miles to over 10 minutes! And just when I get back to feeling good again, another injury on the right side pops up. It’s always that right side too and it moves locations. Anyone have any ideas on what could be going on or what worked for you?

While I’m mourning my summer runs and hoping to get back to running again in a few weeks when the fall leaves hit, for now I’m just grateful I can still walk. Walk through the dog days of summer. It is SO HOT even walking in the morning or at night. The heat has been horrible this year where I live and we’ve had little rain and lot’s of wildfire smoke. It was so nice to get out of Utah for awhile a few weeks ago. I am missing the beach like crazy.

While I try to survive the dog days of summer, the grill has been a lifesaver. It’s too hot to turn on the oven so the grill is getting lot’s of use.

Grilled French Toast and Peaches


  • 6 slices bread (we used gluten free but any thick cut toast works gluten free or not!)
  • 4 eggs
  • 1/3 cup milk (can use dairy free)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 peaches, sliced


  1. Preheat griddle to medium heat. We recommend making your french toast on a grill mat.
  2. In a bowl, whisk together the eggs, milk, cinnamon and vanilla extract.
  3. Place each slice of bread in the bowl, soaking both sides of the bread in the egg mixture.
  4. Place the french toast on the grill. Cook for several minutes on one side until cooked well and golden brown, then flip the toast and cook on the other side until cooked thoroughly. Remove from heat.
  5. While the french toast is cooking, place the peaches on the grill mat. Cook until peaches are soft and cooked well, then flip and cook on the other side.
  6. Serve the french toast topped with the grilled peaches. Top with cream if desired.
