Cornbread and Chili Waffles

With school back in session it’s time cook again for the kids. With limited time that can be so hard to do! These cornbread and chili waffles are a simple and easy dinner to make and takes just under 20 minutes to get to the table!

I always feel more pressure to feed the kids during the school year. During the summer we can eat whenever and enjoy easy and simple salads, or whatever the microwave can cook up in five minutes or less if we’ve been swimming or hiking and the kids come home starving. For whatever reason, I put a little more pressure on myself during the school year to try to provide better meals and comfort food for the kids.

But…my time is still just as limited as it is in the summer. With all the after school activities the kids and I have going on and friends coming in and out all day, it’s hard to get a meal on the table.

I opted to make these simple and easy cornbread waffles. They were a little different than regular cornbread the kids are used to, but the kids enjoyed them and thought it was nicer because they got the perfect amount of chili and cornbread in every bite.

Cornbread and Chili Waffles


    To Make the Cornbread Waffles:
  • 1 box cornbread mix (any works--organic, gluten free, etc)
  • 3/4 cup milk (dairy free substitutions okay)
  • 1 egg
  • 2 tbsp butter, melted (can use dairy free)
  • To Make the Chili:
  • 1-2 cans canned chili (gluten free, organic, etc) or fresh chili recipe


  1. Preheat waffle maker according to manufacturer directions.
  2. In a bowl, mix together the cornbread mix, milk, egg, and butter.
  3. Spoon dough into waffle maker and cook waffles according to manufacturers instructions.
  4. While waffles are cooking, warm or cook chili.
  5. Place a waffle on a plate. Spoon warm chili over the top. Top with cheese if desired.
