Saint Patricks Day Mirror Cake

It seems a little weird this week to celebrate or feel like it is Saint Patrick’s Day. The schools are closed here but I’m still at work and able to do counseling services in person or online. Our county just closed all restaurants for dine in services and the gyms are starting to close. I’m sure other things like movie theaters and malls will begin to follow suit. It’s a weird time for sure.

I decided that I’ll post the pictures and links to the recipes, but today with how crazy it is and trying to move everything to an online platform at my work I don’t have a ton of time to post!

I also feel a little guilty posting this because I haven’t been able to find eggs in three days therefore making this recipe virtually impossible at this point and time to make.

Well…there is still flax. So I could do flax eggs. They do say ‘necessity is the mother of invention.’ This cake can also be made gluten free and dairy free.

Saint Patrick’s Day Mirror Cake

  1. Cook yellow cake mix according to package directions in 2 6-inch round pans. Allow cake to cool completely before frosting. *Can substitute gluten free cake mixes, organic, etc.
  2. Allow cakes to cool completely prior to frosting (we place our cooled cakes in the freezer for 20 minutes prior to frosting).
  3. Make buttercream frosting. You can tint the frosting using gel colors for a richer color if you would like. Frost the sides and top of the cake, smoothing it out flat. *Can substitute non dairy unflavored creamer (we like Nutpods) for whipping cream or milk and non dairy butter for regular butter.
  4. Place the frosted cake in the freezer for 20 minutes prior to glazing with the mirror glaze.
  5. Make the mirror glaze. Frost cake according to recommendations on website. *Can substitute coconut cream for sweetened condensed milk and non dairy white chocolate chips. Use natural gel tints to color glaze.
  6. To decorate: Allow mirror glaze to fully spread (but still be soft to the touch) before decorating. Use gold coins, gold sprinkles, golden oreos, golden coins, green shamrocks or other decorations on the cake. Serve.
