C’s School Project: Four Ingredient Peanut Butter Oatmeal Cookies

It’s kind of tough having to give up your kitchen to the kids. Mainly because you’ll have to give in to the MESS that will ensue. My youngest had an assignment to make some cookies. I’ve learned now that she’s my third. Each of my two older kids took foods class and my kitchen was a disaster after. But some good things came out of it—my son learned to make hamburgers and pancakes and my daughter created one of my favorite fast desserts–Cinnamon Bun Cake in a Mug.

I learned that when you have an elementary student make it easy–so these four ingredient peanut butter oatmeal cookies made her life (and mine) very easy and less messy.

Four Ingredient Peanut Butter Oatmeal Cookies

  • 1 cup peanut butter
  • 1 egg
  • 1/2 cup oats
  • 1/2 cup sugar

Preheat oven to 350 degrees. Lightly grease a cookie sheet and set aside.

In a bowl, mix all ingredients together until smooth.

Roll the dough into tablespoons, then drop onto cookie sheet. Press the tops of the cookies down lightly with your fingers.

Bake at 350 degrees for 10-12 minutes. Remove from oven, allow to cool for several minutes on the cookie sheet then move to the cooling rack to finish cooling completely.

Makes 16-20 cookies.
