When I first got married, I tried to make muffins. My husband threw one of my muffin creations at the wall of our apartment and made it go right through the wall. Brick muffins weren’t an accident–they were commonplace at our house. I couldn’t cook to save my life. I hated cooking and we ate out at least three days a week.
Then of course we had kids. All three of our children were born prematurely and have had their fair share of eating challenges while young. My spouse had Type 1 diabetes that developed at age four. I had parents that were Whole Foods Junkies growing up. I ate CAROB growing up. And my parents tried to convince me it was CHOCOLATE. No. NO! (Seriously have made up for my childhood chocolate deficiency in adulthood).
I’ve become a master recipe manipulator because of that. I missed out on a lot of the fun foods my friends ate, yet I get the value of eating a healthier diet. I didn’t want my kids to miss out, so I began making their favorite recipes and adapting them to what they could eat. I’ve also learned how to eat healthy on a strict (aka teeny tiny) budget. I’ve taught what I’ve learned (and made) for stores like Whole Foods Market and Sunflower Market. I’ve even shared my creations and ideas on my local TV news programs.
I haven’t forgotten my roots though. That’s why there’s the burnt section. It still gets updated on an all too regular basis. 🙂 Although I’ve failed to share how many times I’ve gotten stitches from cutting my fingers with a knife with you. That would just be embarrassing! (But saves you TONS of those nasty Instagram posts people love to share).

Q: So do you eat gluten free, vegan, vegetarian?….
A: Yes and no. I did a lot of cooking classes that required me to try out different ingredients and recipes for different eaters. Before I brought them to class they had to pass the sampling test from eaters that didn’t eat that particular way. If they did, then I knew they were winners. If they didn’t, than it was back to experimenting. After having my last daughter I started to develop stomach aches and was really sick. It kept getting worse. A year and a half ago I had a colonoscopy and endoscopy done and was diagnosed with colitis. I was put on the FODMAP plan by my doctor and have done really well. I’ve been able to introduce most foods back but some give me trouble.
Q: Are your kids really that picky of eaters?
A: Yes! My son likes fruits not so much vegetables, my daughter hates fruits, not vegetables, and my youngest hasn’t decided about any of it. All of them could survive on meat and pasta. Can you tell dinnertime is a blast around my house?
Q: Where can we find the products that you use on your website?
A: Check out my store link. Many of the products I use on a regular basis are there. I will recommend that you do a little research on your own for the best price as well as Amazon prices can fluctuate.
Q: Why are some of your recipes not “healthy?”
A: I am weak. (Sorry about the chocolate, salted caramel and biscoff posts). I also feel that the term “healthy” and “nutrition” are pretty broad words and everyone has their own definition of what it means. Because of that, I try to make sure that I have something for everyone here whether you have diabetes, are looking for heart friendly recipes, are vegan, or are just starting out trying to incorporate some better ingredients. What you won’t find here are any unnatural ingredients. No food dyes, etc.
Q: What is a typical day like?
A: Busy!! I work full time, manage this site, go to school full time, and manage three kids and a crazy dog who is OCD about her daily runs and if she doesn’t get one will become OCD at obnoxiously stalking you until you take her for her daily walk or run. You can’t pull the old bathroom trick either. She will start to make Darth Vader like noises under the bathroom door until you come out.
