Peanut Butter White Chocolate No Bakes

I think these peanut butter white chocolate no bake cookies have quickly topped our family list of “top cookies worth spending the calories on.” Others include our salted caramel sugar cookies with salted caramel buttercream, double chocolate salted caramel cookies and pink grapefruit sugar cookies to name a few. Because I’m naming. They are that good.

Until these came along. Now the others are taking a backseat while these bad boys get their minute. They will also enjoy torturing me while I run them off. But it will all be worth it.

These cookies are amazingly easy to make and taste great.

Peanut Butter White Chocolate No Bakes

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup (1 stick) butter
  • ½ cup milk
  • ½ tsp salt
  • 1/2 cup peanut butter
  • 1/2 cup white chocolate chips
  • 3 cups quick-cooking oatmeal

Instructions

  1. In a saucepan, combine the sugar, butter and milk. Bring to a boil over medium heat. Boil for one minute.
  2. Remove from heat and stir in the salt, peanut butter and white chocolate chips, stirring until smooth. Add in the oats and continue stirring until fully incorporated.
  3. Drop a tablespoon of dough onto waxed paper, smoothing with the back of the spoon. Continue until finished. Allow cookies to set at room temperature for two hours. (To set faster, you can move them to the fridge).
  4. Lift cookies off of the waxed paper to eat. Store in an airtight container in the fridge for several days or in an airtight Ziploc container for up to a month.
