I hope that all of the women out there are enjoying a very special and happy mother's day. Our family is grateful for the many women in our lives throughout the years and now. So many women in so many positions have been so pivotal in our lives and we are grateful for you.

Today I'm sharing my recipe for this copycat allergy friendly Arby's beef n' cheddar. I have missed a good roast beef sandwich. This one was absolutely amazing and hit the spot. It has been way too long!
This recipe is simple and easy to make and it's an easy recipe to make for everyone in the family. I just bought some onion poppyseed rolls for the kids and husband and everyone was able to eat with a simple swap on one ingredient.
Copycat Allergy Friendly Arby's Beef n' Cheddar Sandwich
- Onion buns or gluten free hamburger buns (Schar or Udi)
- Thinly sliced roast beef
- Beef consumme (use gluten free beef consumme for gluten free)
- Cheddar cheese sauce: 4 oz shredded cheddar cheese (do not use preshredded cheese), ½ tablespoon cornstarch, and ½ cup milk (whole milk preferred. For FODMAP use almond or dairy free milk)
In a large saucepan, mix together one can (10 oz) beef consumme and one pound roast beef. Heat on medium low heat until meat is heated. Toast the insides of the buns. While the meat is heating up melt the cheese, cornstarch and milk in a small saucepan until cheese is melted and smooth.
Place the meat on the bottom of the bun, then top with cheese sauce and top with the other half of the bun.
Serve with fries.
